Ingredients

chicken, cut into serving pieces
salt, black pepper and cayenne pepper, to taste
1/2 c
vegtable oil
1 lb
of fresh pork sasage
3 large
onion chopped
1 large
bell pepper, chopped
4
stalks of celery, chopped
2 tsp
of garlic powder
2 c
water
1/2 c
chopped green onion tops
1/2 c
chopped parsley

Directions Step-By-Step

Season chicken with slt, black pepper and cayenne pepper, brown chicken in hot oil in a heavy skillet and remove from skillet when brown.

Brown pork sausage in oil, remove from skillet and cut into 1 1/2-inch pieces.
Remove most of the oil from the skillet and add onion, bell pepper and celery: cook until onions are transparent. Add pork sasage, chicken and garlic powder to skillet with onions; slowly add water , cover and simmer 30 to 40 minutes. add green onion tops and parsley just before serving: serve over hot rice.
