Bleu Cheese Alfredo with Chicken and Spinach

This is a tangy take on a classic alfredo sauce.

1 stick

heavy cream
1 clove
garlic, mashed or
1/4 tsp
garlic powder
pepper to taste
1/2 c
parmesan cheese, shredded
1/2 c
crumbled bleu cheese
1 tsp
italian seasoning or thyme
1 to 2 lb
chicken breast, cooked and cubed
1 to 2 c
baby spinach, packed
1 lb
pasta of choice, cooked according to package

1Melt butter in a medium sauce pan.

2Whisk in cream.

3Add garlic and pepper.

4Bring to a boil, stirring constantly, then reduce heat to low or medium low.

5Add cheeses and Italian seasoning, stir to incorporate.

6Add cooked chicken, stir, and let cook on low heat until chicken is heated through.

7Add spinach and stir. Cook for five minutes.

8Drain pasta, then combine pasta and sauce. Serve hot with crusty bread, if desired.
