This an easy way to jazz up a boneless chicken breast. My husband loves this dish! My recipe is for two, but you can easily scale it up or down. Don't forget to pound the chicken breast! I buy several at a time and pound them before I freeze them.
Trim loins and tip from chicken breasts. Place a breast on a cutting board. Lay a gallon size food storage bag over the chicken. Pound chicken until breast is a the same thickness throughout. Repeat with second breast.
Preheat oven to 425. Line a baking sheet with foil. Mix garlic powder, paprika, salt and pepper together. Set aside.
Lay out three slices of bacon. Roll breast and place seam side down o. The bacon. Wrap and tie each slice of bacon around the chicken, laying the loose ends down each side
Rub each breast on both sides with the spice mixture.
Transfer each breast to the baking sheet and sprinkle with the minced garlic and red pepper flakes if desired. Pour red wine around chicken.
Bake for 30 minutes. Cover with foil and bake for another 20-30 minutes until cooked through. Let rest for five minutes before serving.
