Ingredients For bacon meatball stroganoff

1 pkgegg noodles, no-yolk variety

2 - 4 oz jarmushrooms, sliced

2 Tbspvegetable oil
-
1 lgonion, diced
-
1/2 tsppaprika
-
1/4 tspcayenne pepper
-
1 Tbspbutter, unsalted
-
1/2 cwhite wine, dry
-
2 Tbspall purpose flour
-
2 canchicken broth, low salt
-
1/4 clemon juice
-
2 Tbspmustard, grainy
-
8 ozsour cream
-
1 Tbspdill, fresh
-
1 recipebacon meatballs (see below), thawed

salt & pepper, to taste
How To Make bacon meatball stroganoff

2Boil a large pot of salted water for the egg noodles.

3Saute mushrooms in 1 Tbsp oil in a nonstick skillet over medium high heat until browned, about 5 minutes. Transfer to a plate.

4Saute onion, paprika & cayenne in remaining oil in same skillet until onion is soft, about 5 minutes.

5Prepare noodles according to package directions; drain, toss with butter; set aside.

6Deglaze skillet with wine; simmer until liquid is nearly evaporated. Sprinkle flour over onions & stir.

7Whisk in broth. Add lemon juice & mustard; simmer until thick, 8 - 10 minutes.

8Stir in cooked mushrooms, sour cream, dill & cooked meatballs. Cook until meatballs are heated through. Season with salt & pepper. Serve on top of egg noodles.
