Ingredients For avocado buttermilk soup w/ crab salad

    buttermilk
  • 1/2 c
    tomatillos, fresh, chopped
  • 1/2 c
    chicken broth, low salt
  • 3/8 tsp
    salt
  • 2
    avocados, peeled & pitted
  • 1
    serrano pepper, seeded
  • 2 clove
    garlic
  • 2 Tbsp
    red bell pepper, minced
  • 1 Tbsp
    chives, chopped
  • tsp
    lemon juice
  • 8 oz
    lump crab meat, drained

How To Make avocado buttermilk soup w/ crab salad

    Place first 7 ingredients in a blender; process until smooth.

    Combine bell pepper & remaining ingredients; toss gently to combine. Spoon about 3/4 C soup into 4 serving bowls; top each serving with about 1/3 C crabmeat mixture.
