Ingredients

3 lb
cooked chicken, diced
3 Tbsp
soy sauce
1 Tbsp
cornstarch
3/4 tsp
salt
2 Tbsp
sherry
1 c
blanched almonds
1/2 c
bamboo shoots, halved lengthwise
1/2 c
celery ribs, bias cut 1 inch
1/4 c
onion, cut into strips
1 c
fresh mushrooms
10
water chestnuts, sliced
1/3 c
chicken stock
2 c
peanut oil

Step-By-Step

1Remove both light and dark meat from bones; cut in shreds.
2Smear with a mixture of soy sauce, salt, cornstarch and sherry; set aside.
3Fry almonds or walnuts until golden in 1 1/2 cups hot oil.
4Pour off oil; drain almonds on a paper towel.
5Reheat pan; add 3 tablespoons oil.
6Saute vegetables for 1 minute; drain off oil and set aside.
7Heat 4 tablespoons oil; saute chicken for 1 minute.
8Mix in vegetables and stock; simmer 1 minute.
9Add almonds and serve with rice.
