I love the hearty and homey flavor here. it’s just what you want this time of year (at least in my climate). It’s quite simple and healthy and some folks in the family might not even notice that it’s a vegetarian meal avoiding all of that nasty sat fat and nitrates that comes with meat sausage. I made it in single serving dishes, if you choose to do that the timing directions remain the same.

Ingredients For veggie sausage supper

  • 1/2 lb
    vegetarian sausage links or patties, cut into 1/2 in slices or diced
  • 1
    red pepper or green pepper, chopped
  • 1
    garlic clove, minced
  • 1 tsp
    dried oregano, divided
  • 1 tsp
    onion flakes, divided
  • 5 md
    red bliss or yukon gold potatoes, cut into 3/4 in cubes
  • 1/3 c
    white wine or chicken broth
  • 1/2 tsp
    paprika (smoked paprika preferred) -or to taste

How To Make veggie sausage supper

    Preheat oven to 375°F. Spray a 9 in square baking pan with cooking spray.

    In a large pot over med high heat, cook potato cubes until about half cooked, about 5 minutes. Place on paper towels to dry.

    Place the veggie sausage into prepared baking pan. Top with pepper and garlic, sprinkle with 1/2 of oregano and onion flakes.

    Place still hot potatoes in a single layer over pepper. Pour wine or broth over potatoes.

    Sprinkle with paprika and remaining oregano and onion. Cover pan snugly with foil and bake for 40-45 mins then remove.

    At this point remove foil, add a small amount of water if it seems too dry. Continue baking until potatoes are browning, about 15 mins.
