My children absolutely love this recipe. I add more cheese than the recipe calls for because I like the extra cheese. Feel free to leave out the chicken if you just want vegetables. I also substitute the squash in the off season for other fresh vegetables the grocery has in stock.

Ingredients For squash casserole

  • 2 lb
    squash, cubed and cooked
  • 1 can
    water chestnuts, chopped
  • 1
    sour cream, small carton
  • 1
    small onion, chopped
  • 1 box
    stove top stuffing, save some for the top
  • 1/2 c
    grated cheddar cheese
  • 1 can
    chicken meat
  • 1 can
    cream of chicken soup

How To Make squash casserole

  • 1
    Saute onions in small amount of butter or oil.
  • 2
    Mix all ingredients together and put in a casserole dish. Put reserved crumbs and cheese on top.

    Bake at 350 degree oven for 20-30 minutes.
