My children absolutely love this recipe. I add more cheese than the recipe calls for because I like the extra cheese. Feel free to leave out the chicken if you just want vegetables. I also substitute the squash in the off season for other fresh vegetables the grocery has in stock.

Ingredients For squash casserole

2 lbsquash, cubed and cooked

1 canwater chestnuts, chopped

1sour cream, small carton
-
1small onion, chopped
-
1 boxstove top stuffing, save some for the top

1/2 cgrated cheddar cheese

1 canchicken meat
-
1 cancream of chicken soup
How To Make squash casserole

1Saute onions in small amount of butter or oil.

2Mix all ingredients together and put in a casserole dish. Put reserved crumbs and cheese on top.

3Bake at 350 degree oven for 20-30 minutes.
