This is one of my favorite casseroles to make. I live alone, so I will make this casserole and have my meal, then I like to portion out the leftovers and put in nice little individual sized containers and throw those in my freezer. Then when I come home from work another night, whether it's next week or one night next month, I can simply pull one of these out and put it in the microwave which makes an easy meal and then I don't have to cook that night. Also nice to take to work for lunches. Good stuff!!

Ingredients

1-1/2 lb
ground beef or ground turkey
1-1/2 c
bread crumbs
1/2 c
chopped onion
1/2 c
tomato sauce
1/2 tsp
salt
1/4 tsp
pepper
4 Tbsp
butter or margarine
1/4 c
flour
2-1/4 c
beef broth
1 c
milk
1/2 c
grated parmesan cheese
1 Tbsp
tomato paste
1/2 tsp
garlic powder
2 c
shredded mozzarella cheese
1
8-10 oz. package noodles, cooked according to package directions

Step-By-Step

1Preheat oven to 350 degrees.
2In mixing bowl, combine ground meat, bread crumbs, onion, tomato sauce, salt and pepper. Mix well.
3Form meat mixture into 24 small balls, (or size them to your preference).
4Melt 2 tablespoons butter in a skillet. Brown the meat balls on all sides and remove from skillet. Set aside.
5Add remaining butter (2 tablespoons) to skillet.
6Blend in the flour.

Stir in beef broth and milk. Cook until thick and bubbling, stirring occasionally.
7Add 1/2 cup of Parmesan cheese, tomato paste, and garlic powder. Mix well. (Continue to stir on low heat with wooden spoon until sauce thickens.)
8While sauce is cooking (taking care that it doesn't scald), cook the noodles according to package directions, and drain when done.
9In a casserole dish, place a layer of noodles, meatballs, another layer of noodles, then meatballs, and top with a last layer of noodles.
10Pour sauce over entire casserole.

Sprinkle Mozzarella over the sauce.

Cover and bake for about 40 minutes at 350 degrees.
