Brown meat with onions and peppers until no longer pink.
Add all spices and cook for 1-2 minutes.
Add tomatoes, corn, and beans.
Add the cream cheese and stir until combined and melted.
In an oven proof baking dish (I use a 9in. spring form pan) place a small spoonful of mixture on bottom (or olive oil) and then top with a tortilla. Now layer the mixture and tortillas. I like to top mine with mixture and shredded cheese so the tortilla does not get too crunchy.
Bake in oven for about 20-25 minutes until melty and delicious.
