Taco Monkey Bread

1 lb lean (at least 80%) ground beef
1 Tbsp taco seasoning mix
2 can(s) flaky layers refrigerated biscuits
2 c shredded sharp cheddar cheese (8 oz)
1/2 c chopped tomato
1/4 c chopped red onion
1 Tbsp chopped cilantro
1 medium lime, squeezed (1 to 2 tablespoons juice)
salt and pepper to taste
1 1/2 c shredded iceberg lettuce
1/2 c sour cream

Preheat oven to 350*.
Spray a 9"x5" loaf pan.
Cook ground beef in large skillet with taco seasoning over medium-high heat. Cook until meat is browned. Set aside.
Cut biscuits into quarters. Toss biscuit pieces with ground beef & cheddar cheese in large mixing bowl. Pour into prepared loaf pan.

Bake for 35 minutes or until golden brown.
Toss the tomatoes, onion, cilantro, lime juice, salt and pepper in a medium mixing bowl.
On a serving plate, place lettuce and invert the bread onto lettuce.

Top with sour cream and tomato mixture.

Very interesting! Most of these type recipes I've seen are sweet. What a great change up.

Hi Melanie, yes, I have probably every monkey bread recipe on the face of the earth which I am going to add to my archives here, but this one is different, it's a meal! We are huge taco fans in this house and I received this in my daily kraft email and just had to try it, very very good for a quick during the week meal.
