Taco Cabbage Stew
|2 can(s)||beef broth|
|2||sm. head of cabbage, cut as desired|
|2 can(s)||green beans|
|2 can(s)||sweet corn, or use frozen|
|2 can(s)||diced tomatoes|
|1||sweet onion, diced|
|1 c||garden fresh gourmet salsa|
|1 Tbsp||cumin, more or less to taste. it's supposed to taste taco-y|
|2 tsp||chili powder|
|dash of cayenne (optional... for heat)|
|salt and pepper to taste|
I was making a cabbage soup that morphed into this. My family raved about it and I have made it ever since. Great served with Hawaiian sweet rolls.
I always cook to taste so spice measurements are not exact on this, you will have to tweak it to taste. This is actually a really easy soup.
