beef top round steak, boneless
tomato paste, 6 ounces
1Divide chopped vegetable-spice mixture into 4 equal portions.
2Place a portion on each slice of beef and roll up, tying together with heavy string.
3In skillet, brown roll-ups on both sides in olive oil.
4Remove and place in casserole, adding enough water to cover.
5Bring to boil, lower heat and simmer for 2 hours.
6Add tomato paste, sugar, flour, salt and pepper to taste, and simmer 1 hour longer or until meat is tender.
7Before serving, remove strings from roll-ups.
8Serve over rice pilaf or spaghetti.
