Savory Meat Loaf with Mushroom Gravy

This is taken from an issue of First magazine. I am a big fan of meatloaf, so I am always on the lookout for new ways to prepare it. This was very good! Hope you enjoy it!: )

onion, peeled and chopped
2 Tbsp
corn oil, divided

sandwich bread, cubed
3/4 c
3 lb
lean ground beef
12 oz
italian chicken sausage, casing removed and crumbled
3/4 c
pasteurized egg substitute
3/4 c
1 pkg
(1.4 oz.) vegetable soup and recipe mix
1 tsp
herbes de provence
10 oz
white mushrooms, quartered
2 Tbsp
all-purpose flour
1/4 c
heavy cream
2 c
beef broth

Directions Step-By-Step

Heat oven to 375. In skillet over medium-high heat, cook onions in 1 Tbs. corn oil 3 minutes.
In bowl, combine bread and milk. Let sit 3 minutes. Stir in onions and next 6 ingredients. On broiler pan, shape meat mixture into 10" x 7" loaf. Bake 1 hour, or until thermometer inserted in meat reads 160. Transfer meat to platter; reserve drippings.
In skillet over medium-high heat, cook mushrooms in remaining corn oil 1 minute. Add flour; cook 1 minute. Add heavy cream, beef broth and reserved drippings. Increase heat to high and bring to a boil. Reduce heat to medium and let simmer 3 minutes. Serve gravy with meat loaf.
