My family is always excited to hear we are having meatloaf for dinner since I introduced this recipe. It is super easy and also works with ground turkey. It has a little kick but if you sub Italian Style tomatoes for the tomatoes and green chilis you still get a quite tasty, but mild version for those that aren't much for spice.
Drain tomatoes. Add all ingredients to a bowl and mix by hand until everything is incorporated evenly.
Place mixture in a loaf pan. Press and shape mixture in the pan to make sure the depth is the same throughout for even cooking. Place on the center oven rack and bake for one hour. Remove from oven, allow to cool a few minutes then slice and serve.
