- ground beef (I prefer 80/20) can use chuck, round, sirloin
- 1/2 lb
- chorizo (Mexican sausage, mild or medium
- 1/2 c
- minced onion
- 4 slice
- colby jack cheese (or shredded)
- sliced tomato
- lettuce leaves
- 8 slice
- bacon, fried
- chipotle mayo
- salt and pepper to taste
1Combine beef, chorizo, salt & pepper, and onion and mix together in a bowl.
2Divide mixture into four large patties or 8 smaller patties.
3Grill to your liking. I cook mine to a internal temp of 155 degrees. Top with cheese right before transferring to a platter.
4Dress buns with chipotle mayo. Place pattie, then bacon, and top with tomato and lettuce.
