Ingredients

4 Tbsp butter, unsalted
1/2 c onion, finely chopped
4 Tbsp all purpose flour
1 tsp dry mustard powder
1 tsp thyme, dried
1/4 tsp cayenne pepper
1 1/2 c half & half
1 1/2 c milk
1 c water
2 c corned beef, cooked, chopped
1 pinch nutmeg
black pepper, to taste
6 slc hearty white sandwich bread, toasted
3 Tbsp chives, dried, chopped

Directions

Melt butter in saucepan over medium heat. Add onion & cook until softened, about 1 minute. Stir in flour, mustard, thyme & cayenne & cook until fragrant, about 1 minute. Slowly whisk in 1/2 & 1/2, milk, water. Bring to simmer & cook over low heat, stirring occasionally, until thickened, 6 - 8 minutes.

Stir beef & nutmeg into sauce & cook until beef is heated through, about 2 minutes. Season with black pepper. Spoon over toast & sprinkle with chives. Serve & enjoy!

Yep... make it from time to time and everybody in my household loves the stuff! Great last minute meal with a side salad or vege...

The only way I can figure out how to avoid buying 2 plane seats is to reduce volume. Like, I can limit the amount of soup I actually eat. Do you have a seperate freezer? We can cook whatever we want, label it carefully & you can eat for months... ;-)

No we don't have a seperate freezer/refrigerator. I have been on my Dad for 3 years to get another one. If it costs money....he wont do it! :(
