Kelly's Story

I used to love to participate in chili cook-offs, sooo much fun! But haven't done one in years. So, sharing my triple-winning recipe! (I've actually won 4, but this is the recipe that won 3 years in a row.) More than happy to share! Enjoy!! :D

Blue Ribbon Recipe

Notes from the Test Kitchen:
This recipe had the right amount of heat! The flavors blend well and it has fast become a favorite of many on the Crew!

Ingredients

SAUTE, DRAIN GREASE:
3 lb
lean hamburger
1
green bell pepper, diced
1
red bell pepper, diced
4-8
fresh jalapenos, diced small (add as many as you like for heat, but add at least 4 for mild for the kiddos. *i usually add all 8 for hotter!)

large onion, diced large
salt, pepper and garlic powder to taste (start with about a tsp. each salt and garlic powder and a 1/2 tsp. pepper. you'll be adding more later.)
DUMP INTO CROCK POT OR LARGE STOCK POT AND ADD:
1/3 c
good chili powder, just don't use the el cheapo stuff
1 3/4 c
ketchup, i use heinz
3 Tbsp
lemon juice concentrate
1/3 c
dark brown sugar, can sub light but i just don't even buy that kind anymore because it always turns into a brick
1 Tbsp
worcestershire sauce, i use lea & perrins
2 tsp
regular white vinegar
1 1/2 tsp
yellow table mustard, french's
1 1/2 Tbsp
cumin
3 c
spicy hot v8 juice
1 (16 oz.)
can dark red kidney beans, rinsed and drained first in a colander til no longer foamy/bubbly
2 (8 oz.)
pkgs. fresh sliced mushrooms

(14 1/2 oz.) cans del monte original stewed tomatoes, with the juice. crush tomatoes with hands as you add.
1 c
beef bouillon, i use superior touch better than bouillon beef base
*more salt, pepper and garlic powder to taste

Directions Step-By-Step

Stir all, and bring just to a low simmer, reduce heat and cook for at least 1 1/2 hours on low. Stir gently and occaisionally. You can do this on the stove or in a large crock pot, either way works.

Thick, rich, slightly sweet/slightly hot chili! Very unique! Enjoy!! :D

This is a darn good recipe! I did a nice, slow roast for 4 hours and it was excellent! Perfect when paired with mashed potatoes and cornbread.

I used this recipe as a guide and changed and added a few things and I took home the Peoples Choice Trophy at a chili Cookoff. I replaced the ground beef with lamb and ribyes that I first cooked on a wood fire. I put the lamb and steaks into the chili and let them soak for 24 hours in the fridge then reheated and Wow I wouldn't have cared if anybody else liked it or not because I would have eaten the whole pot all by myself. Thanks for sharing this recipe.

Do you make lemon juice with the concentrate first or add frozen concentrated lemon juice like the brand from Minute Maid? One cup of beef bullion?? Do you add one beef bullion cube with a cup of water? Sound so good. I love chili and would like to try this recipe. Thanks

Just tried making this! Only had 2 jalapeƱos so going to add more chili powder. Its currently simmering! I tasted it and never had a sweet like taste chili before! I think i like! Quick question. If i have the cube beef boulion, how many cubes would i use? Also about how much more salt, pepper, and garlic powder do u add during the simmering?
