My Grandmother's Meatloaf

Ingredients

2 lb
ground beef/sirloin
16 oz
tomato paste
1-2 large can(s)
tomato juice
1-2
stacks saltine crackers crushed
1 large
onion chopped
1 large
bell pepper chopped
2-3
eggs
1-2 c
instant oatmeal
1 large bottle
ketchup

Step-By-Step

1Heat oven to 350.
Combine ground beef, chopped onion, chopped bell pepper, eggs and tomato paste. Mix well with hand.

2Add crushed crackers and oatmeal a little at a time. If too dry, add some tomato juice. Continue to mix.

3Form into 1-2 loaves and place in a deep pan that has been sprayed with nonstick cooking spray.

4Squirt Ketchup fairly heavily over top and sides and spread evenly.

5Pour remaining tomato juice around loaves.

Carefully place pan in oven and bake for 1 hour to 1 hour 30 min.
