Meatloaf with a Tomato Beef Sauce

My husband and I ate at this little Inn in California and asked what was in the Meatloaf. I experimented on my own and came up with this recipe. I made up the sauce on my own and added it to the meatloaf.

This recipe makes a large meatloaf that is so tender, juicy and moist with a deep, hearty flavor. You might think of it as just meatloaf, but this one has a great intense beefiness with that special sauce that will separate it from the pack.

Ingredients

MEATLOAF

1 lb
chopped meat
2
eggs
1
medium onion, finely chopped
1 Tbsp
chopped parsley
1 tsp
salt
1/4 tsp
pepper
1/3 c
oatmeal
1/2 - 1 c
italian bread crumbs
1/2 c
finely shredded carrots
1/2 c
finely shredded celery
3 Tbsp
ketchup

SAUCE

1/3 c
ketchup
1 can(s)
beef consomme' soup
1/2 tsp
dried basil
1 Tbsp
corn starch
several drops of frank's red hot sauce or tabasco hot sauce (optional)

Directions Step-By-Step

Mix all meatloaf ingredients together. Shape into loaf and bake at 350 degrees for 1 hour.

For the sauce, mix ketchup and corn starch together. Then stir in remaining ingredients.

In microwave safe measuring cup, microwave for 3 minutes. Stir.

Pour sauce over meatloaf after it has baked for 1 hour. Bake for another 1/2 hour.
