margaret's quick & easy chili
Since I can't eat Chili - we have been buying Dad the canned Chili. This recipe was given to me by our neighbor - Margaret Barnes & Dad tried it & loved it! He said it was waaaayyy better than any of those canned chili's he's been eating - DUH!!!! So now, this is my go to recipe for Chili for Dad! And now I can freeze it & he can take it out when he needs it. THIS CAN ALSO BE DONE IN A CROCK POT! See below for instructions.

Ingredients
- 1 medium onion, chopped
- 2 tablespoons olive oil, extra-virgin
- 1 pound ground beef, leanest you can get
- 1 can bush's chili magic, traditional, mild or spicy - your choice
- 1 - 14 oz cans diced tomatoes with onions & garlic, undrained
- 1 - 14 oz cans bush's chili beans, mild or spicy - your choice
- 1 sm can green chiles, mild, medium or hot - your choice
- salt & pepper, to taste
- GARNISH (OPTIONAL):
- sour cream, fat-free
- chopped raw onion
- cheddar cheese, shredded
- sliced avocado
How To Make margaret's quick & easy chili

Step 1STOVE TOP: In a large pot, saute onion in oil, about 3 - 5 minutes. Add beef & cook until browned, 5 - 7 minutes; drain. CROCK POT: Place all ingredients (except beans) in crock pot & cook on HIGH 4 hours. Add beans & cook 1 hour on HIGH. Step 2Add remaining ingredients (including all the juices); mix well. Simmer 1 hour.

Step 3When serving, top off with a dollop of sour cream, some raw onion, cheddar cheese & a slice of avocado. Mmmmmmmmmm!
