This is a recipe that my mother got from a friend and it is the most delicious pot roast ever! And so simple! Everyone loves it. The gravy it makes is to die for! I never make beef roast any other way! It can also be made in a slow cooker.
On stovetop, brown meat on all sides in oil in Dutch Oven or roasting pan.
In a medium mixing bowl, combine soy sauce, water, onion soup mix and sugar. Pour over meat.
Simmer, covered, at 350 degrees for 2 1/2 - 3 hours or until tender. Add sherry during last hour of cooking.
When meat is tender, remove to a platter. Bring cooking liquids to a boil. In small bowl, mix cornstarch and 1/2 cup water until smooth. Stir into boiling liquid, stirring until thickened and glossy. Serve with roast.
