Italian Beef Roll Ups

My family enjoys the Italian Beef I make in the crockpot. But I wanted to cut back on potatoes so I used tortillas and added a little cheese - always a fave with my guys!

2-3 lb
beef roast
1 medium
onion, sliced
3 ribs
celery, sliced
1 c
carrots, sliced
1 medium
green pepper, sliced optional
1 can(s)
tomatoes, diced
1 can(s)
mushrooms 4 oz or use fresh
1 Tbsp
gsp (equal parts garlic, salt and pepper)
1 Tbsp
italian seasoning
tortillas, flour 10 inch
1 c
cheddar and/or mozzerella cheese, shredded


1Sear beef roast on all sides in hot skillet

2Layer onions, celery, carrots, mushrooms, and peppers (if used) in bottom of crock pot

3Sprinkle with 1/2 the GSP and about 1/3 of the Italian seasoning

4Lay beef roast on top of the vegetables

5Pour tomatoes and juice on top of the roast, scooting the tomato pieces off of the top

6Sprinkle with the remaining seasonings

7with the lid on, cook on medium 6-8 hours until meat falls apart

8Shred meat and stir to mix with veggies

9remove the lid and continue to cook until most of the juices are cooked off

10Serve on tortillas and top with cheese
