Individual Quick No Bake Enchiladas

|1 Tbsp||olive oil to coat skillet|
|2-4 Tbsp||chili ( i warmed leftover chili from a previous meal)|
|2-4 Tbsp||grated cheddar cheese|
MAY ADD SAUTEED ONIONS, GRILLED
STIR FRY BEEF STRIPS, OR COOKED
GROUND BEEF. BEFORE
SERVING, COVER WITH SMALL AMOUNT
OF ADDITIONAL CHILI AND CHEESE

DirectionsHeat or reheat chili (amount depending on how many you're making)Add olive oil to skillet and get hot.
I used an iron skillet grill (or use plain iron skillet).Lightly brush butter over 2 corn tortillas (on each side) and place in skillet just long enough to soften. Turning once.Add 1-2 tbsp. heated chili ( or seasoned &cooked stir fry beef strips or cooked seasoned ground beef) and 1-2 tbsp. cheese on one side of each tortilla. Using spatula/fingers or large spoon roll each tortilla. Remove from skillet with spatula and serve.May add any of the optional ingredients to your liking. Repeat process for additional servings.
