Gail's StoryJust stumbled upon this tonight as I was going to make fajitas and realized that I was out of flour tortillas. I also had some left over chili that I needed to use up. I really enjoyed these and will be making them again. They're quick and no need to heat the oven. Great when cooking for one or two people in a hurry.
butter, melted or softened
olive oil to coat skillet
chili (i warmed leftover chili )
grated cheddar cheese
MAY ADD SAUTEED ONIONS, GRILLED STIR FRY BEEF STRIPS, OR COOKED GROUND BEEF. BEFORE SERVING, COVER WITH SMALL AMOUNT OF ADDITIONAL CHILI AND CHEESE (OPTIONAL)
3Lightly brush butter over 2 corn tortillas (on each side) and place in skillet just long enough to soften. Turning once.
4Add 1-2 tbsp. heated chili ( or seasoned & cooked stir fry beef strips or cooked seasoned ground beef) and 1-2 tbsp. cheese on one side of each tortilla. Using spatula/fingers or large spoon roll each tortilla. Remove from skillet with spatula and serve.
