- ground beef
- 1 medium
- yellow onion,diced
- taco seasoning mix pkt.
- 1 can(s)
- 2 box
- fiffy cornmeal muffin mix
- 1/2 c
- mexican blend shredded cheese
1In a Dutch oven, brown up Ground Beef on med/ high heat, until no longer pink. Drain off grease. Add onion and dry Taco packet. Add 1/4 c. water. Reduce heat. Stir to combined. Let simmer while you mix up 1 of the boxes of cornmeal mix.
2Heat oven to 350.
Grease a 13 x 9" baking dish.
Spread cornmeal mixture to bottom of baking dish.
Add meat mixture on top of Cornmeal in baking dish. Sprinkle corn on top of meat mixture.
Mix up the other box of cornmeal ,along with 1/2 c. cheese,then evenly spread over top of meat mixture.
3Bake 50 min.
It should be golden brown on top.
Serve with Quacamole and sour cream on top of individual serving portions
