Ingredients

| 2 can(s) | 15 oz size diced tomatoes |
| 1 | large onion, chopped |
| 1 c | sugar |
| 3/4 c | apple cider vinegar |
| 3 tsp | cinnamon, ground |
| 1 tsp | ginger powder |
| 2 tsp | cayenne pepper (more or less depending on the heat you like) |
| 1 tsp | salt |
| MEATLOAF | |
| 2 lb | ground beef |
| 1/2 c | onion, chopped |
| 1/2 c | celery, chopped |
| 1 c | stale bread crumbs, soaked in milk (drain excess milk before using) |
| 2 | eggs |
| 1/2 tsp | greek seasoning |
| 3/4 c | sauce from recipe included here |
| salt and pepper | |

Directions
SAUCEMix together the dry ingredients for the sauce in a saucepan.Add the rest of the ingredients and bring to a boil.Cook over medium heat until it is reduced by half and thickened. Stir frequently.Remove from heat to cool slightly. If too hot when added to the meat it will cook the meat in places.TO MAKE THE MEATLOAFPreheat oven to 350Mix together all of the ingredients and place in a loaf or meatloaf pan. I try to keep the top flat and even a little higher on the sides to contain the sauce that's placed on top.Generously top the meatloaf with the sauce. If you can resist putting it all on, reserve a little to serve on the side.Bake until it reaches 165 degrees in the middle. About an hour but this varies based on how thick it is.
