I always hated meatloaf and avoided it. Then I had the idea to make one to suit my taste. Now it's one of my favorite dishes. The flavor comes from the sauce which is based on my grandmother's chili sauce recipe. It's spicy, sweet and full of flavor! If you're ready for a meatloaf that's not your mother's meatloaf give this one a try.

Ingredients For hanky waving meatloaf

  • SAUCE
  • 2 can
    15 oz size diced tomatoes
  • 1
    large onion, chopped
  • 1 c
    sugar
  • 3/4 c
    apple cider vinegar
  • 3 tsp
    cinnamon, ground
  • 1 tsp
    ginger powder
  • 2 tsp
    cayenne pepper (more or less depending on the heat you like)
  • 1 tsp
    salt
  • MEATLOAF
  • 2 lb
    ground beef
  • 1/2 c
    onion, chopped
  • 1/2 c
    celery, chopped
  • 1 c
    stale bread crumbs, soaked in milk (drain excess milk before using)
  • 2
    eggs
  • 1/2 tsp
    greek seasoning
  • 3/4 c
    sauce from recipe included here
  • salt and pepper

How To Make hanky waving meatloaf

    Mix together the dry ingredients for the sauce in a saucepan.

    Add the rest of the ingredients and bring to a boil.

    Cook over medium heat until it is reduced by half and thickened. Stir frequently.

    Remove from heat to cool slightly. If too hot when added to the meat it will cook the meat in places.

    TO MAKE THE MEATLOAF

    Preheat oven to 350

    Mix together all of the ingredients and place in a loaf or meatloaf pan. I try to keep the top flat and even a little higher on the sides to contain the sauce that's placed on top.

    Generously top the meatloaf with the sauce. If you can resist putting it all on, reserve a little to serve on the side.

    Bake until it reaches 165 degrees in the middle. About an hour but this varies based on how thick it is.
