| 1 lg | onion, sliced 1/8" thick |
| salt & pepper, to taste | |
| 1 lb | 85% lean ground beef |
| 1 Tbsp | butter, unsalted |
| 1 tsp | vegetable oil |
| 4 slc | american cheese |
| 4 | hamburger buns, buttered & toasted |

Directions
Combine onion & 1 tsp salt in a bowl & toss to combine. Transfer to colander & let sit for 30 minutes or longer; tossing occasionally. Using tongs, transfer onion to clean dish towel & squeeze onion dry. Sprinkle with 1/2 tsp pepper.Divide onion mixture into 4 seperate mounds on baking sheet. Form beef into 4 lightly packed balls & season with salt & pepper. Place beef balls on top of onion mounds & flatten beef so onion adheares & patties measure 4" in diameter.Melt butter & oil in 12" skillet over medium heat. Using spatula, transfer patties to skillet, onion side down & cook until onion is deep golden brown & beginning to crisp, about 6 - 8 minutes. Flip burgers, increase heat to high & cook until well browned, about 2 minutes. Place cheese on bottom buns & place burgers on buns & add mustard & pickels & serve.
