My Mother showed me how to make these back in the 70's. This is one of my boys favorite recipe. I make these once a month.

Ingredients

1 lb
ground beef
1
onion chopped
1 pkg
flour tortillas 20 in pkg
3 can(s)
enchilada sauce mild
1 pkg
grated colby monterey jack cheese

Step-By-Step

1Brown ground beef and onion in fry pan. Drain fat .
2Open enchilida sauce and heat in a smaller fry pan. Grab a cookie sheet dip flour tortillas in sauce place one at a time on cookie sheet. with slotted spoon scoop ground beef mixture inside tortilla a grated cheese and roll up. repeat .till all tortillas are on pan .
3pour left over sauce on enchillidas and sprinkle with cheese. pre heat oven to 350 heat in oven until cheese is melted. 5-10 minutes.
