This simple recipe was given to me by a friend I went to college with. She passed away several years ago from lukemia. Every time I make this, I am reminded of what a great lady she was.

Ingredients

2 lb
beef sirloin roast
4 medium
potatoes, peeled and cut in wedges
1/2 pkg
baby carrots
1 small
onion, chopped (optional)
1 bottle
italian salad dressing

Step-By-Step

1Peel potatoes and cut in wedges. Place in bottom of the crock pot. Place carrots on top of potatoes. Then chopped onion (if using).
2Use a fork and poke several small holes in the roast then place on top of vegetables.
3Pour entire bottle of dressing over roast and vegetables.
4Cover and cook on low for 6 to 8 hours until vegetables are tender and meat pulls apart.
