Ingredients

2 lb
beef chuck roast boneless, cut into cubes
4 Tbsp
olive oil, extra virgin
4 to 6
jalapeno peppers
1 medium
onion
2 clove
garlic minced
1/2
bell pepper
8
tomatillos
1 can(s)
tomato sauce
1 1/2 c
beef broth
3 Tbsp
cilantro, fresh
1 Tbsp
paprika
2 tsp
cumin
1 tsp
salt
pepper

Step-By-Step

1Brown beef in hot oil in large skillet
2Dice jalepeno discarding seeds and membranes
3Add to beef with, onions, garlic and green pepper
4Husk tomatillos, wash and chop, add to beef mixture. Add tomato sauce, beef broth and seasonings; bring to a boil
5Reduce heat and simmer for about 2 hours or until beef is tender.
6You can use habanero chili peppers, if you want hotter chili.
Great served with cornbread or Jalpeno cornbread
