Ingredients

1 lb

1 Tbsp
olive oil
1 small
onion, chopped
1/2
green bell pepper, chopped
1 can(s)
15 oz chili beans drained (not rinsed)
1 can(s)
10 oz rotel medium tomatoes
1 tsp
chili powder
1/2 tsp
salt
1/2 tsp
ground cumin
1/4 tsp
pepper
1/4 tsp
garlic powder
8 oz
package, mexican blend cheese
8
flour tortillas
1 can(s)
10 oz mild red enchilada sauce
sour cream, to taste (optional)

Step-By-Step

1Cook ground beef over medium heat, drain and set aside.
2Saute onion and bell pepper in oil until tender. Add to ground beef and mix well.
3Stir into the beef mixture the beans, tomatoes, chili powder, salt, pepper, cumin and garlic powder. Mix well.
4In crockpot, place two tortillas on bottom, then add 1/4 of beef mixture, then 1/4 of cheese. Repeat this order three more times. Pour enchilada sauce over all, cover and cook on low for 2 1/2 hours. I topped mine with some sour cream, which added to the taste.
