|1/2 c||tomato sauce or salsa|
|1/2 c||bread crumbs, seasoned|
|1/4 c||diced onion|
|1/4 c||diced green or red pepper|
|1 1/2 tsp||each of salt,pepper,oregeno|
|1 1/3 c||minute rice|
|1 1/2 c||tomato sauce or salsa|
|1 c||water or you could use chicken or beef broth|
|2 c||cheddar cheese, shredded-divided|
Mix together first 6 ingredients.Pat into a piepan,and up the sides.
Mix next 4 ingredients and 1 cup of cheese.
Cover and bake at 350 degrees for 25-30 minutes.Uncover and top ith remaining cheese(you can use more or different cheeses if you care to)bake another 15-20 minutes till cheese is melted and bubbly.Remove and let set 10 minutes to set up.
Slice into pie wedges serve with cornbread and a nice chef salad.
