If you like spanish rice this is a recipe for you to try.


1/2 c
tomato sauce or salsa
1/2 c
bread crumbs, seasoned
1 lb
1/4 c
diced onion
1/4 c
diced green or red pepper
1 1/2 tsp
each of salt,pepper,oregeno
1 1/3 c
minute rice
1 1/2 c
tomato sauce or salsa
1/2 Tbsp
1 c
water or you could use chicken or beef broth
2 c
cheddar cheese, shredded-divided

Directions Step-By-Step

Mix together first 6 ingredients.Pat into a piepan,and up the sides.
Mix next 4 ingredients and 1 cup of cheese.
Cover and bake at 350 degrees for 25-30 minutes.Uncover and top ith remaining cheese(you can use more or different cheeses if you care to)bake another 15-20 minutes till cheese is melted and bubbly.Remove and let set 10 minutes to set up.
Slice into pie wedges serve with cornbread and a nice chef salad.
