My husband is a meatloaf nut. He LOVES meatloaf. I like it well enough, but he is a true connoisseur. So, if it's a meatloaf recipe, and he sees it, we try it. This is one of his favorites, found in what we lovingly call The World's Most Expensive Cookbook, but which goes by the name of Great American Recipes. . .

Ingredients

1 1/2 lb
ground beef
1/2 c
ketchup
1/3 c
tomato juice
1/2 tsp
salt
1/2 tsp
pepper
1/8 tsp
cayenne
2
eggs, beaten
3/4 c
bread crumbs
1/4 c
onion, chopped

TOPPING:

1/4 c
ketchup
1/2 tsp
mustard
2 tsp
brown sugar

Directions Step-By-Step

In large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onion, and mustard. Mix until thoroughly blended.

Add ground beef. Mix gently but thoroughly.

Line a bread loaf pan with foil. Press in the beef mixture. In a separate bowl, combine the topping ingredients, mixing well. Spread topping over meatloaf. Bake at 400*F for 35 to 45 minutes or until done. Drain off fat. Allow meatloaf to cool for 5 minutes before serving.
