We love how great this meaty chili tastes served over fritos!
You can use ground beef if you prefer, but it's great with the tender beef chunks.

The picture shows it with pinto beans, which are really good in place of chili beans.

2 lb
beef for stew-i like to use chuck and trim some fat
1/2 c
onion, chopped
stalks celery, diced
1 c
beef stock, or 1 bottle of beer
2 can(s)
petite diced tomatoes
2 can(s)
mild chili beans, or your preference
2 Tbsp
chili powder ( i use mexene)
1 tsp
cumin, ground
dollop of sour cream, green onions
mexican blend shredded cheese
garlic powder
frito scoops

Directions Step-By-Step

Place beef in large pan to brown on all soeds for about 8 min. Add browned meat, veggies and beef stock- or beer in a crock pot.
Cook on high for about 2-3 hours.
Add all the rest ingredients.; except the Fritos and cheese.
Continue to cook on high for 2 more hours, or low heat for 4-6 hours.
Season to taste with salt and pepper. Add more chili powder and cumin if desired.
Place some fritos in a bowl and top with chili and cheese; or put the fritos on top instead. You can add a dollop of sour cream and chopped green onions.
