Chili Glazed Meatloaf
|1 lb||ground beef, lean|
|1 c||panko bread crumbs|
|1/4 c||milk or buttermilk|
|1||whole egg, slightly beaten|
|1/2 c||chili sauce (i like heinz)|
|1 Tbsp||olive oil|
|1||small onion, minced|
|1 or 2||cloves garlic, minced|
|1/2||small red or green pepper, minced|
|salt and pepper to taste|
|extra chili sauce for basting on top|
This is a really delicious version of Meatloaf that I really love. I like the sweet tang of the Chili Sauce. This is adapted from Martha Stewart's recipe, but I have changed a few of the ingredients to suit what I had in my pantry. It's just the two of us, so I made a small meatloaf, which was perfect!
NOTE - if you double the recipe, make sure you add a bit of time to the overall baking - about 1 hour and 15 minutes should do.
