- beef brisket
- 1 large
- onion diced
- carrots diced
- ribs celery diced
- 1/4 tsp
- freshly cracked black pepper

- onion soup mix
- 1 c
- 1/3 c
- 1 c
- 1 Tbsp
1Preheat oven to 550
2Place meat, onion, carrot, & celery in roasting pan and brown uncovered in oven. About 15 mins
3After browning lower oven to 300
4Season meat with pepper.
5Dissolve onion soup mix in water.
6Mix ketchup and beer together and add to soup mixture.
7Pour mixture over meat.
8Cover pan with foil and roast for 3 hours or until tender.
9Add flour to 1/4 cup pan drippings to make a paste.
10Stir paste into gravy in pan.
11To make a thicker gravy, add more flour.
12Return pan to oven and continue roasting for an additional 30 minutes.
13Slice meat across grain and serve with gravy.
