This is how I prepared my boneless Chuck Roast today. Adding it here to get it in writing before I forget what I did! You will not taste the instant coffee, I promise! This makes a very tender roast and the method and seasoning can be used for any beef roast. We declared it "Beyond Good!" hence the name!
Melt butter in heavy large fry pan over medium high heat. Brown roast on all sides. Place in slow cooker. Placed cleaned carrots around roast.
In same pan, sauté onions and mushrooms until onions are light and mushrooms begin to brown...about 4 minutes. Turn off heat.
To the pan, add the 8 oz. can tomato sauce plus 1 can of water. Add the Worcestershire sauce, garlic and pepper seasoning, dried thyme and marjoram, savory, Emeril's original essence, salt, extra pepper if desired, sugar, and instant coffee. Whisk this mixture together well and pour over the roast and carrots.
Cook over low 5 hours or until meat is fork tender.
