Do you love nachos? I created this new casserole recipe filled with ranch sauteed ground beef, hash brown potatoes ,jalapenos and a pepperjack queso.

Ingredients For beefy nacho casserole with pepperjack queso

  • 1 bag
    frozen shredded hash brown potatoes, thawed
  • 1 c
    crushed tortilla chips
  • 1 jar
    processed cheese sauce
  • 1 Tbsp
    olive oil
  • 2 lb
    ground beef
  • 1 md
    red onion, diced
  • 5
    fresh jalapeno peppers, seeded and sliced
  • 1 1/2 Tbsp
    steak seasoning
  • 1 tsp
    ground cumin
  • 2 Tbsp
    ranch style dressing mix
  • 1 Tbsp
    margarine
  • 1 c
    heavy cream
  • 1 can
    evaporated milk
  • 8 oz
    cream cheese, softened
  • 1 can
    diced tomatoes and green chilies, drained
  • 8 oz
    pepperjack cheese, shredded

How To Make beefy nacho casserole with pepperjack queso

    Coat a 3-quart baking dish with cooking spray. Add thawed shredded hash brown potatoes, 1 cup crushed tortilla chips and processed cheese sauce; mix well.

    Press down with a wooden spoon on the bottom and sides of the baking dish. Season with crushed red pepper flakes. Cover with plastic wrap and refrigerate for 1 hour.

    Preheat oven to 350 degrees F.

    Heat the olive oil in a large, deep skillet over medium heat. Add ground beef and cook for 5 minutes or until no longer pink. Drain any excess fat.

    Reduced to low heat. Stir in diced red onion, sliced jalapeno peppers, steak seasoning, ground cumin and ranch dressing mix; saute for 3 minutes until blended. Remove from heat and set aside.

    Melt margarine in a medium saucepan over medium heat.

    Combine heavy cream, evaporated milk, cream cheese, diced tomatoes and green chilies and shredded pepperjack cheese. Stir together and let it simmer for 6 minutes until it thickened.

    Add ranch beef mixture and stir well until combined. Remove from heat.

    Spoon evenly into the prepared baking dish. Sprinkle with remaining crushed tortilla chips.

    Bake for 30 minutes or until golden brown.
