Ingredients
| 1 c | leek or onion finly chopped |
| 1 Tbsp | minced garlic |
| 2 Tbsp | olive oil |
| 2 pkg | stew beef |
| 1 can(s) | stew tomatos- italian style |
| 3 can(s) | beef broth |
| 5 c | water |
| 1 1/2 c | chopped celery |
| 2 c | potatoes peeled & diced |
| 1 c | carrots, peeled & chopped |
| 1 c | cauliflower, small florets |
| 2 | bay leaves, dried |
| 1 1/2 tsp | cayenne pepper |
| 1 1/2 tsp | peprika |
| 2 tsp | oregano, dried |
| 1 1/2 tsp | sugar |
| 2 Tbsp | fresh parsley |
| 1 1/2 tsp | pepper |
| salt to taste |

this was my first time trying to make a stew, the family loved it. it was also great for leftovers to take for lunch. we even had enough to have it again later in the week, when reheating i added 2 cups of fresh green beans and served it over rice

Directions
brown stew meat with a little salt and pepper. after browned remove from pot. in same pot soften the leeks/onion, garlic and celery with olive oil and salt to taste
add tomatos, broth, water, oregano, bay leaves and let come to a boil
add meat, potatoes, cayenne, peprika, pepper,sugar and stew on med to low heat for 30 min.
add cauliflower, carrots and fresh parsley. continue to stew for additional 20 min. add salt to taste, remove bay leaves and serve
