Ingredients

1 c leek or onion finly chopped
1 Tbsp minced garlic
2 Tbsp olive oil
2 pkg stew beef
1 can(s) stew tomatos- italian style
3 can(s) beef broth
5 c water
1 1/2 c chopped celery
2 c potatoes peeled & diced
1 c carrots, peeled & chopped
1 c cauliflower, small florets
2 bay leaves, dried
1 1/2 tsp cayenne pepper
1 1/2 tsp peprika
2 tsp oregano, dried
1 1/2 tsp sugar
2 Tbsp fresh parsley
1 1/2 tsp pepper
salt to taste

alyson's Notes:
this was my first time trying to make a stew, the family loved it. it was also great for leftovers to take for lunch. we even had enough to have it again later in the week, when reheating i added 2 cups of fresh green beans and served it over rice
 
 

Directions

1
brown stew meat with a little salt and pepper. after browned remove from pot. in same pot soften the leeks/onion, garlic and celery with olive oil and salt to taste

add tomatos, broth, water, oregano, bay leaves and let come to a boil

add meat, potatoes, cayenne, peprika, pepper,sugar and stew on med to low heat for 30 min.

add cauliflower, carrots and fresh parsley. continue to stew for additional 20 min. add salt to taste, remove bay leaves and serve

* I love to serve on top of a scoop of white or brown rice*
