BEEF,BLACK BEAN,& SWEET POTATO CASSEROLE

THIS IS A CARIBBEAN STYLE DISH. I THINK THAT I HAVE DUPLICATED IT PERFECTLY. A TOUCH OF SPICE AND SWEETNESS, THAT IS JUST RIGHT.

Ingredients

1 lb
ground chuck
1
8 oz. can tomato sauce
1 Tbsp
chili powder
1 tsp
ground cumin
1/2 tsp
salt
1
15 oz. can black beans, drained
2
medium sweet potatoes peeled and thinly sliced
1/3 c
chopped raisins
3
plum tomatoes chopped
1
green chili seeded and chopped
1
small onion chopped
1 c
shredded cheddar cheese

Step-By-Step

1PRE HEAT OVEN TO 350. GREASE A 3- QUART BAKING DISH. SPREAD THE BEANS IN AN EVEN LAYER ON BOTTOM OF DISH. LAYER THE POTATOES OVER THE BEANS. SPRINKLE WITH THE RAISINS, TOMATOES, CHILI AND ONION. SET ASIDE.
2BROWN BEEF OVER MEDIUM HEAT, DRAIN. STIR IN TOMATO SAUCE, CHILI POWDER, CUMIN AND SALT. SPREAD OVER TO OF VEGETABLES.
3COVER AND BAKE FOR 45 MINUTES. UNCOVER, SPREAD CHEESE ON TOP AND BAKE 15 MINUTES LONGER.
