Ingredients

3 lb
boneless pot roast, cut into 1/2 inch slices
2 Tbsp
oil

tomatoes, peeled and quartered
4 oz
sliced mushrooms with juice
1/2 c
black olives, pitted and drained
1
garlic clove, crushed
1/2 tsp
salt
1/4 tsp
pepper
1/4 tsp
basil
1
bay leaf

Step-By-Step

1Heat oil in dutch oven or electric frying pan.

2Add meat and brown well on both sides.

3Pour off fat and add the rest of the ingredients to the pan.

4Cover tightly and simmer 2 1/2 to 3 hours.

5Serves: 6
