Beef And Barley Dinner

Ingredients

1 lb
ground beef
1/2 c
green bell pepper, diced
1/2 c
onion, finely chopped
1
garlic clove, minced
2.5 c
water
16 oz
canned tomatoes, undrained and chopped
6 oz
tomato paste
3/4 c
medium barley
1 Tbsp
sugar
1/2 tsp
salt

Step-By-Step

1In a 4-quart saucepan or dutch oven, brown ground beef.
2Add green pepper, onion and garlic.
3Cook until onion is tender; drain.
4Add remaining ingredients.
5Bring to a boil.
6Reduce heat to low; cover.
7Simmer 45 to 50 minutes or until barley is tender, stirring occasionally.
8NOTE: To use quick barley, substitute 1 cup quick barley for medium barley. Prepare recipe as directed above except simmer 15 to 20 minutes or until barley is tender, stirring occasionally.
