Basic Shepherds Pie

Ingredients

5 large
sweet potatoes, peeled, cubed
1/4 c
milk
2 Tbsp
butter
pinch
nutmeg
salt and pepper to taste
2 Tbsp
vegetable oil
2
onions, diced
1
celery stalk, finely chopped
1
carrot, finely chopped
1 tsp
thyme
1/4 tsp
chili flakes
2 lb
lean ground beef
3 Tbsp
flour
1/2 c
beef broth
2 Tbsp
tomato paste
2 Tbsp
worcestershire sauce

Step-By-Step

1Preheat oven to 375.

2Bring large pot of water to a boil, cook potatoes until tender, about 20 minutes; drain.

3Add milk, butter, nutmeg, salt and pepper to potatoes and mash until smooth and fluffy.

4Saute onions, carrot and celery in oil over medium heat for 5 minutes.

5Sprinkle with thyme and chili flakes.

6Add ground beef and cook until no longer pink.

7Stir in roast beef, sprinkle with flour, then pour in beef broth, tomato paste, worcestershire sauce, salt and pepper; stir well.

8Reduce heat and cook for 5 minutes.

9Spread meat mixture in a square casserole, spread mashed potatoes over and bake 35-45 minutes until heated through.

10Place under broiler for 1 minute.
