Barbecued Beef Brisket

Ingredients

1 c
ketchup
1 c
water
2 Tbsp
minced onion
2 Tbsp
cider vinegar
1 Tbsp
prepared horseradish
1 Tbsp
mustard
black pepper, coarsely ground
1/2 lb
beef brisket
2 large
onions, sliced
5
carrots, cut into 1" slices
5
potatoes, unpeeled quartered
salt to taste
pepper to taste

Step-By-Step

1Combine ketchup, water, onion, vinegar, horseradish, mustard and pepper.
2Place brisket in a shallow glass baking dish.
3Pour marinade over; cover and refrigerate overnight.
4Heat oven to 350.
5Scatter onions on top of meat.
6Cover and bake 2 1/2 hours.
7Add carrots and potatoes; cover and continue baking until meat and vegetables are tender, about 1 hour.
8Add salt and pepper to taste.
9Cut meat into thin slices.
10Use the pan juices as sauce.
