My mum used to make this recipe and I haven't eaten a meatloaf that compares. When I met my husband his mum was a cooking teacher and her mum and his paternal grandmother were excellent cooks - stiff competition however my meatloaf beat all theirs hands down. Now it is a favourite with our kids! The sauce is so moorish especially as it caramelises and thickens you will find that you need to double the mixture every time you make it just like we do.

Ingredients For barbecue meatloaf

  • 500 g
    lean beef mince
  • 1 md
    onion
  • 1 md
    carrot
  • 1 md
    egg
  • 1/2 c
    bread crumbs
  • 1/4 c
    tomato sauce
  • 2 Tbsp
    worcestershire sauce
  • BARBECUE SAUCE INGREDIENTS
  • 1 tsp
    instant coffee powder
  • 1/2 c
    tomato sauce
  • 1/4 c
    worcestershire sauce
  • 1/4 c
    brown sugar, firmly packed
  • 2 Tbsp
    lemon juice
  • 1 oz
    margarine or butter
  • 1/2 c
    water
  • 2 Tbsp
    white vinegar

How To Make barbecue meatloaf

    Place mince in bowl, add finely chopped onion, grated carrot, breadcrumbs, egg and first lot of tomato sauce and Worcestershire sauce in a bowl, mix well. When combined place in a lightly greased slice tin mounded in a loaf tin. (Because this meatloaf is cooked in its sauce do not use a loaf tin).

    Place meatloaf in oven at 185 degrees Celsius for 30 mins.

    Whilst meatloaf is in oven combine all sauce ingredients in a saucepan and bring to the boil, the. Simmer for 5 mins.

    At the end of 30minutes gently pour barbecue sauce over the meatloaf and cook for another 90 minutes basting the meatloaf every 20 to 30 mins.

    Serve with Mashed potatoes, peas and carrots.
