awesome meatloaf

A family favorite already! Came from Jan 2012 Southern Living! Used the meatloaf as main entree DEFINITELY MAKING AGAIN Page 93 of the January magazine for the Entire Recipe "Edward's Open-Faced Meatloaf Sandwiches.

Ingredients For awesome meatloaf

  • 7 slice
    bacon (thin) or 5 thick
  • 2 c
    chopped or diced onions (1 large white)
  • 1/2 c
    finely chopped or diced celery
  • 2 clove
    garlic, minced
  • 2 c
    chopped fresh mushrooms
  • 2 lb
    ground chuck
  • 1 1/2 c
    soft, fresh breadcrumbs
  • 3 lg
    eggs
  • 1/4 c
    cola soft drink
  • 2 Tbsp
    bourbon (i did not use)
  • 2 tsp
    worcestershire sauce
  • 1/2 c
    ketchup
  • 1 1/2 tsp
    salt
  • 1/2 tsp
    freshly ground pepper
  • TOPPING
  • 2 Tbsp
    light brown sugar (for topping)
  • 1 Tbsp
    soy sauce (for topping)
  • 1/2 c
    ketchup

How To Make awesome meatloaf

    Preheat Oven to 350 Cook bacon in large skillet over medium heat stirring often 8 - to minutes or until crisp. Remove bacon and drain on paper towels reserving drippings in skillet

    Add onions, celery, garlic to hot drippings and saute 3 minutes

    Add mushrooms saute 4 minutes.

    Transfer mixture to large bowl and let cool to room temperature

    Add ground chuck, breadcrumbs, eggs, cola, (bourbon), worchestershire, 1 1/2 tsp salt, 1/2 tsp pepper, 1/2 cup ketchup and cooked bacon to cooled onion mixture. Combine by hand.

    Stir together brown sugar, 1/2 cup ketchup and soy sauce in separate bowl

    At this point I made two small loafs and put on the ovens broiler pan. Brush top with mixture from #6. (Original instructions call for one loaf in lightly greased 9x5 loafpan.)

    Bake for 1 hour and 20 min to 1 hour 30 minutes or until meat thermometer registers 155 degree. Reserve 1 cup drippings

    GRAVY - 1 1/2 Tbsp butter; 1 Tbsp all purpose flour; 1/2 cup beef (or chicken) broth; the 1 cup of saved drippings; 1/4 tsp salt; 1 tsp freshly ground pepper; 1/4 tsp fresh lemon juice (I did not use the lemon juice)
