Adapted this recipe from one I saw in Woman's Day magazine. I have tried it with both beef and chicken. The guys liked beef the best while I prefer the chicken. It seems like a lot of ingredients but it is really not that bad!
Combine in a medium sized bowl carrots,cabbage,2 teaspoons of soy sauce, 2 tablespoons of mayonnaise, 2 tablespoons of vinegar,1/2 teaspoon of salt and 1 teaspoon of sugar. Mix thoroughly, cover and allow to rest in the refrigerator at least 2 hours.
Mix in small bowl brown sugar, garlic cloves, ginger and 2 tablespoons of soy sauce. Set aside.
Cook ground beef in skillet over medium heat until no longer pink.Transfer beef to a mesh strainer and rinse with cool water about 2 minutes to remove excess fat and grease(The rinsing step is optional and can be skipped. It is not needed if using ground chicken.)
Wipe out skillet used for cooking beef. Heat skillet on medium heat add the 1 tablespoon of oil, when warm stir in onion. Cook onion until soft, about 3-4 minutes. Return beef to skillet add brown sugar mixture and 2 tablespoons of hoisin sauce.Stir to combine and continue to heat until warmed.
Heat tortillas according to package instructions. Then divide beef evenly among the tortillas, top with cabbage and enjoy!
