"My copycat recipe for Long John Silver's "Battered Fish" also makes an excellent batter for deep-fried prawns, mushrooms, onion rings and even Chinese chicken drumettes (serve with a dipping sauce of light soy sauce, minced garlic and snipped green onion, with a splash of dry sherry)...."

INGREDIENTS
2 lbs lb cod or 2 lbs halibut or 2 lbs pollock
3 cups self-rising flour
4 tablespoons cornstarch
2 teaspoons granulated sugar
1 teaspoon Accent seasoning
1/2 teaspoon fine flake sea salt
1/2 teaspoon ground celery salt
1/2 teaspoon ground paprika
1/2 teaspoon ground turmeric
1/4 teaspoon ground fennel
1/4 teaspoon garlic powder
1/4 teaspoon ground tarragon
1/4 teaspoon white pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon onion powder
1 3/4 cups water (use 1 3/4 cups club soda if using regular flour)
2 tablespoons lemon juice
canola oil
