1 cup Guinness or other Irish stout

1 tablespoon dijon mustard

1 teaspoon Worcestershire sauce

2 teaspoons brown sugar

2 cups Irish cheddar (or aged white cheddar), shredded

salt and pepper to taste

1 cup tomato, diced
•
1/4 cup red or green onion, diced
•
1/4 cup pickled jalapeno, sliced or diced
•
1 large avocado, mashed with 1 tablespoon lime juice and seasoned with salt
•
1/4 cup sour cream (or Greek yogurt)
•
1/4 cup cilantro, torn
