For the Pretzels:

2 cups of warm water (110° to 115°)

1 1/2 tablespoons of granulated sugar

1 tablespoon of Kosher salt + more for seasoning
•
1 1/2 tablespoons of dry active yeast
•
1/2 cup of melted unsalted butter
•
6 cups of all-purpose flour
•
1 cup of baking soda
•
2 tablespoons of vegetable oil
•
2 egg yolks whisked with 1 tablespoon of water to make an egg wash
•
6 cooked bratwursts
•
For the Cheese Sauce:
•
2 ounces of unsalted butter
•
2 ounces of all-purpose flour
•
1 cup of whole milk
•
1 1/2 to 2 cups of dark German beer
•
1 cup of shredded sharp white cheddar
•
1 cup of shredded mild cheddar
•
Kosher salt and fresh cracked pepper to taste
